I think apple pie was the first baking Jen did at my kitchen.  We followed this recipe from “In the Sweet Kitchen” and no wonder it’s called “DAMN FINE APPLE PIE”.  The flaky pie pastry was really excellent.  She brought the 3 little cute pies to her later dinner with 2 guy friends, and they were pleasantly surprised that JEN CAN BAKE!!  Last time I visited her apartment, I saw a rolling pin on her dish rack, so I’m sure she made this apple pie again!!  Since I’m taking this baking book back, guess I should post the recipe so Jen can continue to bake her favorite apple pie.

I absolutely love this baking cook In the Sweet Kitchen by Regan Daley.  I tried an apple pie recipe, the pastry was perfect.  Then I had this hazelnut pound cake once last year, and loved it.   Today I am one day over my expected due date.  Since the baby has not come yet, I’m spending an afternoon in the kitchen making of these pound cakes to get rid of the bag of hazelnuts.  It was a lot of work skinning the hazelnuts, but it’s definitely worth it.

May be I should call it passion fruit mousse cake.  It’s a very light cheesecake that you cannot even taste much cream cheese.

I searched online trying to look for a good recipe, but gave up because most of them are quite complicated and requires egg yolks (I have to avoid raw eggs).  So I decided to dump whatever I have together, and I’m pleasantly surprised with the good results.

What’s better than free recipes mailed to your house?  I have signed up for Kraft’s “What’s Cooking” years ago.  It was pretty exciting at first to see free food recipes in the mail every few months.  Then I started to lose interest to make the recipes because it’s too commercialized.  In order to make most of their foods, you have to buy Kraft’s signature salad dressing / dairy products / jello or pudding powder / Christie’s biscuits etc.  I think it’s great to busy mom to make quick dinner like, but at this point I still prefer to make things from scratch.

Then this recent issue had a “Fluffy Buttermilk Pancake” that they suggest using Kraft’s Peanut Butter and banana as toppings.  The pancake recipe itself is awesome!!  My last attempt to make pancakes must be months ago..  as I was never able to make super nice pancakes.  This recipe is definitely a keeper!!

It was 3-4 years ago when I made a dessert at my friend’s house with a recipe called “Magic Pudding cake”.  It’s magic because you pour a bowl of boiling water into a cake batter and then just bake.  The result is an unforgettable hot chocolate cake with chocolate sauce all in one pan.  All you need is a scoop of vanilla ice cream for perfect finish.  Unfortunately I lost the recipe book immediately after I left her house.   Recently I came across a similar cake at Canadian Living which include peanut butter.  Tonight I’m making it with the jar of natural almond butter and the amount of sugar in the recipe scares me!  I think cutting out the sugar dramatically makes me feel less guilty.
