I tried so many different muffin recipes in past few years. some use plain yogurt and some use sour cream, some needs mixing of butter and sugar with a mixer first.  I finally settle with my favorite so far:  a simple recipe just requires a whisk and basic pantry ingredients and with regular milk without needing to buy a tub of yogurt / sour cream.

My real favorite muffins are actually are the “Farmers Market” brand muffins from Superstore.  I love their cake-like texture.  However I don’t like their size so big and the taste too sweet, and store bought stuff has always more chemicals and is more pricey.  So below are my “pretty good blueberry muffins” before I can replicate the Superstore muffins at home.

It’s quite low fat, and not very sweet.  I’m still willing to try new muffin recipes, so my search doesn’t stop here.

Best part of the turkey dinner is the leftovers.  I end up have to cook more over the next few days: making turkey stock from the bones, bread stuffing and extra cheese to stuff jumbo mushrooms, making turkey pot pie, and last but not least, some scrumptious muffins from the cranberry sauce.

My favorite drink is Seabreeze which is a combo of Orange Juice, cranberry juice, vodka and tonic water.  Who doesn’t like cranberry + orange??

Today is the last day I bake in my Richmond home.  I’m moving next week and it’s a older house we are moving to, which we have to do a bit of renovation in the kitchen.  With a tight budget, we may do just simple upgrades of appliances and painting the cabinets ourselves.  I can see it will be a long while before I can bake again, so today I made my last loaf of my husband’s favorite raisin bread and finish up whatever I see siting in the fridge:  1/2 of a big carrot, an apple, and my 1/8 bag of raisin.  It’s a healthy muffin loaded with fiber.  I added only 1/4 cup of coconut and cannot taste any, thus I increase to 1/2 cup in the recipe.

I just found this recipe that I cut out from Canadian Living last year, still lying around on my computer desk.  Mom always like to give me fruits, so I always have lots of apples and oranges at home.  This one big apple has been sitting in my fridge for so long, it’s time to cook / bake it.  I’m surprised how well apples can be kept in the fridge!

Oat and Apple Crumble-Top Muffins recipe – Food – Canadian Living.

I followed almost exactly like the recipe, except I reduced amount of sugar, butter, and tiny bit of cinnamon.  I also put note on a better order of adding the wet ingredient to ensure it’s well mixed.

Best Ever Muffins


One thing I like to do is google search a recipe that’s labelled as the “best” and supported by good ratings.  However, I usually don’t  follow exactly the recipe.  I make note of the reviews of other creative cooking amateurs who share their opinion and tips on how they like the recipe better.  Then I reduce the sugar as I never like my baked goods too sweet, add in ground flax if possible and then mix and match a few similar recipes.   And I am never disappointed by the final modified recipe.    In fact, since I never made the orignal recipe, is it really better than the original?
