I finally move into the new home a month ago and so far had loved my new kitchen.  Because of the pregnancy, I’m cooking and baking a lot less than used to.  Nevertheless, I feel obligated to cook up any ingredients found in my pantry before I will be even busier after my baby comes to the world.

So I made the pistachio mousse cake last week.  The pistachio nibs (along with some sugar / egg / milk, so I should call it pistachio paste) filtered out was a waste if it’s down in the garbage.  I decided to make cookies out of it.

I have still 1 cup of Macadamia nuts left in my house, so decided to finish them up with another batch of cookies.

Since I have not enough macadamia, I topped up with 1/4 cup of chopped silvered almond.  Next time I will baking soda to 3/4 tsp… I think 1 tsp is too crunchy.

The recipe is enough to make 5 dozens of mini cookies.  I need to 4 cookie sheets to bake them all (of course one tray at a time).  Last batch of the dough, I added in the 3-4 tbsp of ground pistachio left from making pistachio mousse cake.  It gives the cookie an interesting matcha color.

I tried to look online and there is nothing close to what I’m looking for.  Most of them used Pistachio pudding mix which I cannot find in Vancouver.  I prefer to make mousse from scratch anyways.  Since I have had a pistachio ice cream recipe that I like, I decide to just modify that to make a pistachio mousse cake for my best friend’s birthday.
I think it’s very successful.  Just that the macaroon I wanted to use to decorate the side of the cake did not work out.  It’s too thin like biscuits and too big to fit onto  my 1.5 inches high mousse cake.  However, it still worked out and with simple decorations, I think it’s a gorgeous homemade cake that money cannot buy.

Pistachio ice cream


Whenever I eat to an ice cream parlour, I always order pistachio gelato.  I love its creaminess and pistachio’s mild nutty taste.   During my first anniversary trip to Portland, I bought an inexpensive ice cream maker from Costco.  Not sure if it’s my freezer that’s not cold enough or it’s the ice cream maker, the mixture is still runny after the expected 30 minutes process time.  Although it’s a pain to manually finish by alternating freezing and mixing, the product is satisfying without too much artificial additives found in store-brought ice cream.   This ice cream gets hard easily, thus it’s best to enjoy it within a couple days after making it.
